Chocolate Chip Pumpkin Muffins

A definite part of every Fall season is making pumpkin muffins! After trying this recipe from my Grandma Mae, you may want to make it part of your Fall To-Do list as well!

  • 3 1/3 cup flour
  • 2 tsp soda
  • 3 cup sugar
  • 1  tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Mix dry ingredients. Add 1 cup oil, 4 beaten eggs, 2 cups of pumpkin.

In the past few years, I've started adding 1/2 a bag of chocolate chips. Now, I wouldn't  have these muffins any other way.

Bake @ 350 degrees:   Be careful of letting these cook for too long. They are supposed to be very moist muffins!

For regular muffins, bake for 15-18 minutes
For mini muffins, bake for 14-16 minutes
For a loaf, bake for 50 - 55 minutes.

One more thing to cross off my fall to-do list
